Hawaiian Fried Rice

INGREDIENTS:

2 cups rice (your rice preference)
1 cup broth (your preference)
1 1/3 cups water
2 tablespoons olive oil (you can use coconut oil)
3 eggs
1 chopped onion
1 cup spinach
1 cup cole slaw
2 cups pineapple
Salt to taste
If you like it spicy, add crushed pepper flakes to taste

PREPARATION:

Going back home during the holidays means the world to me and also means having fun with family and friends under the sun at the beach. With that Caribbean spirit, I hope that you enjoy a taste of this traditional fried rice to spice up your holiday menu.

Add olive oil or coconut oil and half of the onion to a pot on medium-high temperature and stir-fry the onion. Add water and broth on high temperature and add the salt. When the water is boiling, add the rice. When the rice is dry, change the temperature to medium-low, stir and put the pot lid on. Let it cook for 15 minutes, stir and put the pot lid back on. Let it cook for 10-15 minutes. Use a big pan and add olive oil and scramble the eggs. Add the rest of the onion, cole slaw and pineapple and stir-fry on medium-high temperature. Add the rice and spinach. Stir-fry and serve. If you like it spicy, add crushed pepper flakes to taste.
